1 lb. bulk pork sausage
1 can (10 3/4-oz.) Cream of Mushroom soup, undiluted
3/4 c. milk
1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
3 c. sliced, peeled raw potatoes
2 c. (8-oz.) shredded Cheddar cheese
parsley (optional)

Brown sausage; drain well & set aside. Combine soup, milk, onion, salt & pepper. In a greased 2 qt. casserole dish layer 1/2 of the potatoes, 1/2 of the soup mixture, 1/2 of the sausage. Repeat, ending with sausage. Cover & bake 1 hr. at 350 or until potatoes are tender. Sprinkle with cheese and return to oven (uncovered) for 2-3 min. or until cheese melts.
