8-10 large potatoes
2 medium onions,diced small
2 large stalks celery, diced small
5-6 eggs, boiled ,4 chopped-2 sliced
4-5 pickles, any flavor diced small
1 1/4-1 1/2 cups mayonnaise
3/4 -1 tsp mustard
1 tsp. sugar
Salt
Black Pepper
1 - 1 1/2 tsp. pickle or vinegar juice

Boil potatoes whole with skins on them. Place in cold water. when cool, peel and cut into cubes. Place in large mixing bowl. Add the diced onions, celery,pickles and the 4 chopped eggs.In separate dish mix together the mayonnaise,mustard, pickle juice, salt, pepper and sugar. Mix this together. Taste, if you want a spicier dressing add more mustard. Add this to the potato mixture. Put sliced eggs on top.Chill

I usually make this for big get togethers, picnics or parties .I had to sit and make a small batch to get some of these figures. I never measure things I go by taste, smell and looks. This was the smallest amount of potato salad I have ever made. I use the little small kosher dill pickles and I use the juice from the pickles to thin the dressing. If you like sweet pickles use them. Its up to you if you want to use that juice or use apple cider vinegar. Some people might want to use sweet or dill relish. After mixing, taste, you may need to add more salt and pepper
