4 chickent cutlets, pounded thin
flour
2eggs, beaten
salt, pepper, paprika
2 medium lemons
butter and olive oil
sm. can chicken broth
capers

Directions:
Directions:
In a shallow bowl, mix flour, salt, pepper, and paprika. In another, the beaten egg. In a fry pan, heat butter and olive oil. Dredge chichen in flour, egg, and flour, add to pan. Saute on 1 side until browned, then turn. Cook 3-4 minutes until cooked through. Squeeze lemon on chicken while cooking.(Add more oil and butter if necessary) Remove chicken to platter and keep warm.
To juices in skillet, add 2 Tbsp of lemon juice, capers, some chicken broth, and a little white wine, if desired. Reduce heat to low. Scrape up bits and simmer for a few minutes.
Pour over chicken. Garnish with extra lemon and parsley.

Add mushrooms, if desired. Adjust lemon and capers to taste.
It's very important to dredge in flour-eggs-flour.
Variation: use veal cutlets, turkey cutlets, or fish.
