1 medium Eggplant
1/3 C green pepper-chopped
1 med. onion-chopped
2 garlic cloves-crushed
1/3 C olive oil
1-2 small cans tomato paste
1/2 C mushrooms-sliced
1/4-1/2 C water
2 Tbsp vinegar
1/2 C pimento green olives-sliced
1 1/2 Tsp sugar
1/2 Tsp oregano
salt & pepper to taste

Directions:
Directions:
Pour oil in pot--heat. Add 1st 4 ingredients. Cover -- cook gently, stirring occasionally. for 10 minutes, over medium heat.
Add remaining ingredients, mixing well. Cover + simmer for 30 minutes or until eggplant is tender. Add water if too thick.
Chill. Serve with crackers. Freezes well.
