1 small pumpkin, peeled and cubed
1 large potato, peeled and cubed
1 onion, peeled and diced
1 tsp ground coriander
1 tsp ground cumin
olive oil
1 to 1.5 litre chicken or vegetable stock
Salt & pepper

Directions:
Directions:
Heat enough oil to cover the base of a large saucepan, add all the ingredients except for the stock. On a low to medium heat sweat the vegetables for about 15 minutes, stirring occasionally. Add the stock and bring to a boil, then simmer for about 15 minutes or until vegetables are soft. Remove from heat and let cool slightly. Puree or blend mixture. If too thick add more stock. Add seasonings if needed. To serve add a spoonful of sour cream or plain yoghurt.

For a variation add some curry powder. To make it vegetarian use vegtable stock.
