9 eggs, separated
1 cup sugar
1 cup minus 2 tablespoons potato starch
1 lemon zested and juiced

Directions:
Directions:
Beat egg whites until they stand in peaks. Add 1/2 cup sugar, 2 tablespoons at a time, until thick and glossy.

Sift potato starch. Measure and sift 3 times.

Beat (with clean beaters) egg yolks until thick and lemon colored. Then gradually add remaining sugar. Continue to beat until very thick.
Add lemon juice and rind while eggs are still beating.

Fold in egg whites by hand and sift in potato starch gently over mixture folding until thoroughly mixed.
Pour into ungreased 9 inch tube pan and bake 1 hour at 350. Check for doneness.

Cool upside down on rack or over a soda bottle. Cool completely.
