2 sheets frozen puff pastry, thawed
250g marscarpone
1 c. grated parmesan cheese
8 truss tomatoes, thickely sliced

Directions:
Directions:
Preheat oven to 220 or 200 fan forced. Line 2 baking trays with baking paper.
Cut each pastry sheet in half, then cut each half into three, widthways. With a small paring knife, score each piece of pastry 1cm in from the edge, then lay on prepared trays. Spread mascarpone over pastry, keeping within scored edge. Sprinkle with parmesan and top with tomato slices. Season well.
Bake for 15-20 min, until puffed and golden
