Ingredients:
4 c. coarsely chopped apples
2 c. sugar
2 eggs
2 c. sifted flour
2 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda
2 tsp. vanilla
1/2 c. salad oil
1 c. chopped nuts

Directions:
Directions:
Mix apples and sugar, set aside. Beat eggs slightly and beat in oil and vanilla. Mix and sift flour, soda, cinnamon and salt. Combine all ingredients and add nuts. Pour into greased 13x9x2 pan. Bake at 350 for 40-45 minutes. Frost or serve with whipped cream or ice cream. I used this frosting:

Frosting - #1
1 (1lb.) box powdered sugar
1 stick butter
1 - 8 oz. cream cheese
1 tsp. vanilla
garnish with nuts on top

Frosting - #2 (alternative)
4 oz. cream cheese
8 oz. sour cream
2 c. powdered sugar
8 oz. Cool Whip, thawed

Personal Notes:
Don't forget the flour. I did once and it bubbled instead of baked, so we served it over ice cream! You just might want to try that.
