1 stick margarine, melted
! Ĺ sleeves of Ritz crackers, crushed
1 can cream of chicken soup
1 can cream of mushroom soup
1- 8 oz.carton sour cream (reduced fat)
6 chicken breasts, cooked boned and skinned
1- 8oz. can sliced water chestnuts (optional-I donít use)

Directions:
Put crackers in 4 cup Pyrex dish, pour margarine on top, crush crackers and mix.
Sprinkle half of cracker crumbs on bottom of 9x13 Pyrex dish.

Cook boneless chicken breasts in water about an hour (can add chicken broth to water). Cut lengthwise and cube.

Mix soups and sour cream
Stir in chicken (and water chestnuts if using)
Pour on top of crackers.
Put rest of crackers on top and sprinkle poppy seeds generously over top.

Bake at 350 degrees until bubbly and crackers are browned on top (approx. 30 minutes)
