"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
1 can black beans 1 can black-eyed peas 1 medium onion 3 large tomatoes 1 avocado 3/4 bunch cilantro 1 (10 oz.) bag frozen corn 1 8 oz. bottle Italian salad dressing 2 large bags tortilla chips (preferably dipper style)
Drain and rinse canned beans and peas. Dice onions, tomatoes and avocado. Snip cilantro with scissors or kitchen shears. Combine these ingredients. Add the corn. (May use canned corn if needed.) Add dressing and mix well. Serve with chips in separate bowl.
You will love this appetizer and it is a quick and easy favorite for ward socials or neighborhood picnics. It is from a friend in our ward who brings it to all our potluck socials and no one will let her bring anything else! To serve 30, double recipe and add an extra avocado.
