2 C diced raw potatoes
1/2 C sliced carrots
1/2 C chopped celery
1/4 C chopped onion
1 1/2 tsp salt
dash of pepper
2 C water
8 oz cheddar cheese

Directions:
Directions:
Bring to boil all vegetables in pot, just barely cover vegetables with water. Reduce heat to low, cover and simmer for 15 minutes. Do not drain. Mix and stir until smooth:1/4 C flour, 1/2 C milk
When smooth add to vegetables mixture, stir until it thickens. Cube cheese. Add vegetables and stir until melted.
