1 C. sugar 1/2 C. butter (unsalted or regular) 1 C. flour sifted t tsp. baking powder Pinch of salt (omit if using regular butter 2 eggs Any variety of sliced plums quantity enough to cover 9 inch spring form pan
Preheat oven to 350º. Cream the sugar and butter. Add the flour, baking powder, salt (if using) and eggs and beat well. Spoon the batter into a 9 inch springform pan. Arrange plum slices on the batter. Sprinkle lightly with sugar and lemon juice depending on the sweetness of the fruit. Dust with cinnamon. Bake at 350º one hour.
