1/2 cup flour
1 tsp. salt
1 tsp. pepper
1 tsp. celery salt
2-3 lbs. pheasant or chicken, cut in parts
1/4 cup canola oil
1 cup heavy cream
1 large onion sliced in wedges
4 cloves garlic, crushed
1 tsp. dried thyme

Preheat oven to 300

In zip-lock bag, mix the flour, salt, pepper and celery salt. Heat the oil in a large skillet over medium high heat. Coat the meat pieces with the flour mixture and brown on all sides. Transfer meat to a roasting pan and pour the cream over the top. Add the onion wedges, garlic and thyme. Bake covered for 2 hours.

This is one of Molly's favorite meals. We like extra onions in it. If you are sensitive to garlic I would cut the amount. It really is strong, especially in the sauce.
