4 boneless, skinless chicken breasts 1 1/2 cups thick and chunky salsa 1/2 cup peach or apricot preserves
Brown chicken breasts on both sides in a small amount of oil in skillet. When chicken is browned, add salsa and preserves to the skillet. Cover and simmer for 20 minutes or until chicken is completely done. Serve over rice.
