1 (15-oz.) can black beans
1/4 c. red bell pepper, finely chopped
1/4 tsp. jalapeņo pepper, seeded and chopped
3 T. EVOO
1 T. lime juice
1/4 tsp. maple syrup
1/4 tsp. sea salt
3 T. chopped scallions
3 T. chopped cilantro
1/4 tsp. cumin
1/8 tsp. cinnamon

In med. bowl, mix all of the ingredients together. Taste, then add salt and lime juice, as needed. Wrap in tortillas with Salsa Cruda and any other toppings desired.

Chantel is the wife of J. T. Sokol, the daughter of Jerry and Barbara (Chandler) Hollenshead and the granddaughter of Virginia (Rogers) Hollenshead & the late John Hollenshead. A real favorite around our house! Granny sends me a subscription to Guideposts magazine, which had this recipe. I presented it to a very skeptical Ann-Marie and J.T. They enjoyed every bite, as did Allison.
