1 c. cooked rice
1 can cr. of mushroom soup
3/4 c. mayo
1 cup diced celery
8 oz. can water chestnuts, drained and diced
1 c. grated cheddar cheese
2 c. cooked chopped chicken
1 tsp. dried minced onion
1/2 tsp. salt
1 1/2 c. finely crushed potato chips

Directions:

Combine rice, soup and mayo; mix well. Stir in next 6 ingredients. Pour in a 2 qt. casserole dish (or 13x9 pan if doubled receipe). Top with crushed chips (Lays only). Bake @350 deg. in oven for 45-50 minutes or until brown on top.

I use chopped fresh onions (at least 1 lg.), I use double cheese, mayo and soup and always double and freeze in smaller containers. Cannot make mistakes, easy and freezes well. Bake when thawed partially.
