vegetable cooking spray
3/4 c. uncooked white rice
1 1/2 c. apple juice
1/2 c. chopped celery
1 c. chopped baking apple
1 tbs. lemon juice
1/4 c. chopped pecans, toasted

Directions:
Directions:
Coat a large skillet with cooking spray and place over medium heat. Add rice and cook, stirring frequently, until rice is lightly browned. Remove from heat and slowly stir apple juice into the rice. Bring mixture to a boil. Cover, reduce heat to low and cook for 15 minutes. Stir in chopped celery and cook an additional 5 minutes or until liquid is absorbed and rice is tender.
Toss apple with lemon juice and add to rice mixture. Stir in pecans.
