Pie Crust Ingredients:
1 1/2 C plain flour
1/2 C Crisco shortening
dash of salt
ice water (about 3 T)

Pumpkin Pie:
1 C brown sugar
1 t ground cinnamon
1/2 t ground ginger
1/4 t ground cloves
1/4 t ground nutmeg
dash of salt
1 T flour

1 1/2 C cooked pumpkin
3 large eggs
1 C Carnation Milk

Directions:
Directions:
Make pie crust and form in into a 9" deep dish pie pan. Set aside. (Do not bake.)

Using a blender, lightly blend the 3 eggs until well mixed. Add the brown sugar, spices and flour into the beaten eggs in the blender. Lightly blend.
Alternately add the cooked pumpkin and milk, blending after each addition until all ingredients have been added.

Pour into the prepared crust. Bake in a 450 oven for 10 minutes. Then lower the oven to 325 and bake until firm, about 45 to 50 minutes.

This is Blanche Cook's original recipe that I tweaked by using a blender instead of a mixer. We love the smooth texture and evenness of the spices throughout the pie. I have a 10" deep dish ceramic pie pan that I love to use for this pie. I usually add 1/2 this recipe again for the deeper dish which still results in a lovely pie and will yield 12 smaller slices.
