5 extra large hard boiled eggs
2 tbs. soft unsalted butter
3 tbs. mayonnaise
fresh crabmeat - about 1/2 lb.
2/3 8 oz. package cream cheese
4 oz. sour cream
3 scallions, chopped

Directions:
Directions:
Put eggs through a fine meshed sieve, pressing with wooden spoon. Add butter and mayonnaise and pat into a 9" glass pie pan to resemble pie crust. Cover tightly and chill overnight.

Mix cream cheese and sour cream and spread over egg crust. Chop scallions, including green part and sprinkle over crust. Spread crabmeat over scallions. Garnish with lemon peel rose. Chill and serve with cocktail sauce on side.

You can serve individual pieces cut into wedges or
put on crackers.
