6 oz. Bittersweet Chocolate Chopped (use very good chocolate such as Ghiradelli), 6 Tbsp. butter, 2 Tbsp flour, 1/2 c. white sugar, 3 eggs.

Preheat oven to 400
1. In saucepan bring 1" water to a simmer. Put butter and chopped chocolate in heatproof bowl and set over the saucepan until chocolate is melted. Stir and remove from heat.
2. In small bowl mix flour and sugar.In medium bowl, whisk eggs. Whisk in the flour and sugar, then stir in melted chocolate until combined.
3. Scrape into 5-6 ramekins (sprayed with Pam)
4. Bake for about 12 minutes until the edges are firm and the center is runny. Serve the puddings with very good vanilla ice cream.

I've tried many molten cake recipes, and this is by far the best and easiest. I warm the butter and chocolate on low during dinner. While the dinner plates are being cleared, I finish the recipe and put in the oven. By the time you serve coffee the puddings are done. Serve hot out of the oven. Put the ramekin on a small plate. The ice cream starts melting immediately.
Always a hit.
