Marinade:
1/4 c. Cooking Sherry
1/4 c. Soy Sauce
Minced garlic (2 gloves)
Pinch ground ginger
1-2 Tbsp. Brown Sugar
1 Tbsp. Oyster Sauce

Directions:
Directions:
Trim "membrane" from flank steak. Score diamond pattern on both sides of steak to make it flatter for broiling. Pour marinade over meat in bag. Refrigerate 8-24 hours turning occasionally. Broil or grill @ 7 minutes per side (to your desired doneness)
Let meat "rest" at least 10 minutes.
Cut thin on bias

I got this recipe from a friend who was is a caterer in Iowa City.
The beef can be served at room temperature as small open face sandwiches for a party buffet with good mustards or horseradish sauce.
