Ingredients:
4 large boneless skinless chicken breasts.
2 c. Minute instant whole grain brown rice.
1-16 ounce package petite white corn VIP brand.
1-14 ounce can Swanson chicken broth.

Directions:
Directions:
Roast chicken breasts in large covered roaster for about an hour at 350. Remove chicken breasts from roaster (I spoon out the white residue in the water in the pan.) Put the chicken broth, corn, and brown rice in the roaster and stir together with a fork. You may need to add a little more water. Put chicken breasts back on top of mixture and bake covered another 45 minutes. I like to sprinkle lemon pepper on top of the chicken breasts, also.
