2 eggs
1 cup sugar
1/4 cup oil
1/2 cup vanilla yogurt or buttermilk
1 tsp. vanilla
1 3/4 cups rhubarb
2 cups flour
2 tsp. baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon

Directions:
Directions:
Combine eggs, sugar, oil, yogurt, and vanilla. Add rhubarb. Combine dry ingredients then fold into rhubarb mixture. Fill cupcake liner 3/4 full. Bake at 375 for 16-18 minutes.
