Zucchini Nut Bread Recipe

3 eggs
1 c salad oil
2 c sugar
3 ts vanilla

3 c flour
3 ts cinnamon
1 ts soda
1 ts salt
1/2 ts baking powder

2 c finely grated pealed zucchini
1/2 c nuts

Mix together first 4 ingredients. Sift together dry ingredients; then mix with egg mixture. Add grated zucchini and nuts.

Grease and flour 2 8x5 loaf pans. Bake 1 hour at 350 degrees. Remove immediately.
