1 cup honey

Cook honey to hard crack stage (285º) stirring occasionally. Pour onto buttered marble slab or large heat resistant plate. As soon as outside edges are cool enough to touch, butter your fingers and fold cooling honey to center and make a long roll. With your right hand, pick up one end of roll and with the left hand pick up the other end. Start stretching and pulling roll of honey while still hot, but don't burn yourself. Add butter to fingers if it becomes sticky. Pull until honey becomes light and porous. Small strings will begin to develop. Stretch into a rope of 1/4 to 1/2 inch in diameter then cut with scissors into bite size pieces. Store in wax paper-lined metal can for 2 days to soften (if you can wait that long).
