6 medium to large tomatoes
12 cloves garlic
4 Tbl. olive oil
Fresh chopped single herb or combination of basil, rosemary, thyme to taste
Salt and pepper to taste

Directions:
Directions:
Slice tomatoes in half and squeeze out the seeds. Place tomatoes cut side up in baking dish and scatter on herbs. Drizzle with the oil and sprinkle with salt and pepper. Bake until the tomatoes are soft but still hold there shape. About 2 hours in 300 oven.

Great intense tomato flavor. This is a good way to use those year end tomatoes. Roast with meat for oven efficiency.
