1 lb. eggplant
lb. fine dry bread crumbs
6 tbsp. grated parmesan cheese
2 tsp. salt
tsp. ground black pepper
2 eggs beaten
2 tbsp. milk
Celery salt

Directions:
Directions:
Peel and cut eggplant into crosswise slices thick. Cut each slice into strips and set aside. Combine next four ingredients. Beat eggs with milk. Dip eggplant strips into bread crumb mixture, then into egg and milk, and then again into the bread crumbs.

Fry in hot fat, preheated to 375 . Sprinkle with celery salt. Drain and serve hot.
