1 cup grated cheddar cheese
1/3 cup cooked and crumbled bacon
1/3 cup chopped green onion
5 medium baking potatoes, baked and cooled

Directions:
Directions:
Cut potatoes in half lengthwise. Cut each half in half lengthwise. Cut all 20 strips in half crosswise, for a total of 40 pieces. Scoop away most of potato, leaving thin layer on each skin. Place potato wedges on ungreased baking sheet skin side down. Sprinkle with cheddar cheese, bacon and green onion. Bake at 400 for 10-15 minutes. Serve with sour cream. Makes 40 potato skins. For simple potato skins, simply brush scooped out potato skins with melted margerine or butter, sprinkle with seasoning salt or taco seasoning, place skin side up on baking sheet and bake until crisp.
