2 fresh eggs
1 tbl water
salt
pepper
8 freshly shucked wellfleet oysters
one slice of finlandia swiss cheese

Directions:
Directions:
Crack eggs into a bowl and beat well with a whisk, add water and salt and pepper to taste. Turn into a hot well oiled omelet pan. Slide the oysters using a fork onto one half of the pan and promptly put the cheese onto the oysters. Watch for the cheese to begin to sweat. Flip the other half of the omelet over the cheese side and support the flipped half until it's willing to stay on its own. Cook for one more minute and then cover with a warmed serving dish, flip and serve. enjoy the most delicious omelet in town.
