1-1/2 lb. Italian sausage or ground beef
1-2 clove(s) garlic, minced
1 T. whole basil (fresh if you have it)
1-1/2 t. salt
16 oz. diced tomatoes
2 6-oz cans tomato paste
10 oz. lasagna noodles
2 c . Ricotta cheese
1/2 c. ground Parmesan or Romano cheese
2 T. parsley flakes (or fresh parsley if you have it)
2 eggs, beaten
1 t. salt
1/2 t. pepper
1 lb. mozzarella cheese, thinly sliced

Preheat oven to 375 . Brown meat, spoon off and discard excess fat. Add next five ingredients. Simmer uncovered 30 minutes, stirring occasionally. In the meantime, cook noodles. Combine remaining ingredients except mozzarella in a small mixing bowl. Place half of noodles in bottom of 13"x9"x2" baking dish. Spread 1/2 ricotta cheese filling on top of noodles. Add half the mozzarella cheese; then half the meat sauce. Repeat. Top with additional grated Parmesan cheese and bake for 30 minutes or until bubbly.

The first time I made this myself, I did not have much experience with exotic ingredients such as garlic. I did not realize that a garlic clove was not a garlic bulb. Needless to say I had way too much garlic in the dish and my guests who included grandpa Jack and grandma Rose did not seem to mind!
