3 large eggs, separated
1-1/2 c granulated sugar
1/3 c (5 1/3 T) butter, melted & cooled
1 c lightly toasted & coarsely chopped almonds
2 T Grand Marnier or other orange-flavored liqueur
2 T chopped candied orange peel or 3 T of finely grated orange zest
3-1/2 c of unbleached flour
1-1/2 t baking powder

Preheat oven to 325. Butter a baking sheet or line it with parchment paper.
In a large bowl, beat the egg yolks with 3/4 c sugar until light and sugar is dissolved. Stir in melted butter, almonds, Grand Marnier, & orange peel.
In a separate bowl, beat the egg whites until they just begin to form peaks & gradually beat in the remaining1/4 c of sugar until the whites form stiff peaks.
Sift the flour and baking powder together. Fold in 1/3 of the flour mixture into the yolks; then fold 1/3 of the egg whites in. Repeat, alternating, until well combined. The dough will be firm & slightly sticky. If the dough is soft add more flour. With floured hands, divide the dough into two logs approximately 1 1/2" wide. Arrange logs on the prepared baking sheets and bake for 20-25 minutes or until lightly brown and firm to the touch. Remove from the oven and set the baking sheet on the rack for about 10 minutes. On a cutting board, cut the logs diagonally into slices about 1/2" wide. Return the slices to the baking sheet and bake for about 5-7 minutes on each side or until the biscotti are very lightly browned and crisp.

Cool on racks then store in airtight container.

Personal Notes:
Chocolate-Mint Biscotti - Omit the almonds, Grand Marnier and orange peel. Add 6 oz bittersweet chocolate melted with 1 T of cocoa. Add 4 T of finely chopped fresh mint.

Rosemary-Walnut Biscotti - Substitute lightly toasted and coarsely chopped walnuts for the almonds. Omit the Grand Marnier & orange peel.
