6 oz. Rotelle twist noodles - boiled in salted water

1/4 c sesame seeds
1/2 c salad oil (3/4 if doubled)
1/3 c soy sauce
1/3 c white wine vinegar
3 T sugar
1/2 t salt
1/2 t pepper
3 c shredded cooked chicken
1/2 c chopped parsley
1/2 c thinly sliced green onions
1 bunch spinach leaves

Cook noodles, drain and rinse in cold water and drain again. Turn noodles into a large bowl. In a small frying pan combine sesame seeds with 1/4 c of salad oil; cook over medium-low heat stirring until seeds are golden (about 2 minutes). Let cool. Stir in remaining oil, soy, vinegar, sugar, salt, and pepper. Pour over cooked pasta, add chicken, then toss lightly.

Cover and chill for at least 2 hours or overnight

To serve add parsley, onions & spinach. Toss lightly.
