3-3/4 to 4-1/4 c. unsifted flour
2 tbsp. sugar
2 tsp. salt
2 pkg. active dry yeast
1 c. milk
1/2 c. water
2 c. grated cheddar, sharp (1/2 lb.)

Directions:
Stir together 1-1/2 c. flour, sugar, salt and yeast. In saucepan, heat milk and water (120). Gradually stir into flour mixture, beat at medium speed for 2 minutes, scraping bowl. Add cheese and 1/4 c. flour; beat at high speed for 2 minutes, scraping bowl. Stir in enough additional flour to make stiff dough.

Turn onto lightly floured surface; knead until smooth and elastic - 8 to 10 minutes. Place in clean, dry, greased bowl turning to grease top. Cover; let rise in warm (80) draft-free place until doubled -- about 1-1/2 hours.

Punch dough down. Divide into 4 equal portions and shape into 4 loaves for 6x3x2-1/2 inch pans. Place in greased pans. Cover; let rise as previously until doubled -- about 1 hour and 20 minutes.

Bake at 375 for 20 to 25 minutes. Place a sheet of foil over loaves for last 5 minutes to avoid over-browning. Remove from pans to wire rack and cool. May be stored at room temperature for a day or two. Afterwards, refrigerate.
