4 eggs
1-1/2 c. sugar
2-1/2 c. flour
2 tsp. salt
2 tsp. soda
1-1/2 c. oatmeal
2-1/2 c. (20 oz.) crushed pineapple, undrained
3 c. flaked coconut

Directions:
Directions:
Combine eggs and sugar. Beat until light (about 2 minutes). Sift flour, salt and soda. Add to egg mixture and blend until smooth (about 2 minutes or longer). Add remaining ingredients and mix very well. Spoon into 2 greased and floured 9x5 inch loaf pans.

Bake at 325 for 1 hour. Remove from pan immediately and serve warm or cold.
