1 lb (about 3 medium) tomatoes, sliced
1/4 lb mozzarella cheese, thinly sliced
1/3 c canola oil
3 T red wine vinegar
3 T flat leaf parsley, chopped
3 T onion, finely chopped
1 T basil leaves, finely chopped
1/4 t salt
Dash of pepper

Directions:
Directions:
Alternating, arrange the tomatoes and cheese in bottom of shallow dish. In small jar, with tight-fitting lid, place the oil, vinegar, parsley, onion, basil, salt and pepper. Cover and shake well. Pour over tomatoes and cheese. Cover and refrigerate several hours, periodically spoon herb mixture over tomatoes.

I love this dish during tomato season. I usually will bring this dish back to room temperature after refrigeration before serving. The tomatoes will taste so much better. Also I have used this recipe on top of homemade pizza and in sandwiches.
