1/3 cup Bisquick 1/4 cup Parmesan cheese 1/8 tsp. pepper 2 slightly beaten eggs 2 cups shredded zucchini (unpared) 2 Tbsp. melted butter or cooking spray
Stir together first three ingredients. Add beaten eggs. Fold in zucchini. In oiled skillet or electric frypan at medium heat drop about three tablespoons of mixture for each round. Cook about 2 or 3 minutes on each side till golden. Keep warm until served.
