Pico De Gallo is a Spanish term that speaks of the beak of chickens represented here by the chopped cabbage.

This recipe was a staple at the library reception at Tess’ and Clay’s high school, Sherando High, Frederick County, VA., where I was one of the librarians. “There was a good reason to wait for mom at the end of the day on faculty appreciation day.”
