2 T. olive oil
2 ham steaks
1 cabbage
1 lg. onion
1 c. shredded carrots
2 c. frozen hashbrowns
1 bay leaf
2 c. cider
1 can white beans
2 T. honey
1 qt. chicken stock
1 lb. sauerkraut, rinsed
1/4 c. chopped dill
sour cream

Directions:
Directions:
Heat soup pot over medium heat with olive oil. Add ham and lightly brown. Add shredded cabbage, onion, and carrots. stir in hashbrowns and season liberally with salt and pepper. Add bay leaf, cider, honey, beans and chicken stock. Place lid on pot and bring to boil. Uncover and simmer 10 minutes until vegetables are tender. Stir in kraut and dill and adjust seasoning of soup. Serve with sour cream.
