Banana Muffins Recipe

2 - 3 ripe bananas
1 c. sugar
1 c. Miracle Whip
2 c. flour
2 tsp baking powder
1 tsp baking soda

Alternate additions include:
1 handful chocolate chips
1/2 c. walnuts
2 tsp cinnamon
2 tsp cocoa powder
Amaretto or banana liqueur

Add bananas to a mixing bowl, add sugar. Mash until bananas are in small pieces and sugar is dissolved. Sift the dry ingredients into the bowl in order to help mix in the baking powder and soda. Add chocolate chips etc if desired. Mix only until all ingredients are incorporated, as over mixing makes for tougher muffins. Spoon the batter into a greased lined muffin pan. Cook in 350 oven for 15 minutes, check earlier if your oven cooks hot. Check with toothpick and remove from oven when toothpick comes out clean. Allow to cool in muffin pan for 3 minutes, then using a knife, free the muffins from the pan. Turn them on edge to allow muffins to cool further, and when cool transfer to a plate. Enjoy with a pat of butter.
