Fresh oregano
Fresh garlic
Olive oil

Pine nuts (optional)

Directions:
Directions:
Place fresh herbs, garlic cloves (to taste) and salt and pepper in a blender or food processor. Cover and pulse, drizzling olive oil until mixture emulsifies. At this stage the mixture can be poured in to ice cube trays and frozen. These ice cube trays will only be good for making pesto afterward. If using the cubes for a pasta topping, toast the pine nuts, crush and blend in a food processor with the pesto cubes.

These pesto cubes can be used in spaghetti sauce, making meatballs, risotto sauce or anywhere you need fresh herbs. Amounts of herbs and garlic can be varied.
