1/2 cup butter or margarine
1 cup water
1 cup sifted all-purpose flour
4 eggs

Preheat the oven to 375

Add water and butter to a sauce pan until the water boils and the butter melts.

Add flour all at once and stir until the mixture forms a ball.

Remove from heat and beat in eggs, one at a time, until the mixture is smooth and glossy. Spoon mixture in spoonfuls about the size of a large olive unto a greased cookie sheet.

Bake for 30 minutes or until golden brown. Remove from oven and gently prick each puff with a fork. Turn heat off of the oven and put puffs in for another 10 minutes.

Slice, leaving a little bit intact, and provide your favorite filling when ready to serve.

These puffs are great because you can serve them as an appetizer or dessert. As an appetizer, I provide my favorite fillings (ham salad, egg salad, cheese mixture) and let them fill their own. As a dessert, I fill them with Ice cream or pudding and provide chocolate sauce to make mini-Claires.
