1 large apple, chopped but not peeled
3/4 c chopped onions
1 large green pepper, chopped
40 oz kidney beans, drained
35 oz canned tomatoes, diced
1 1/4 c brown sugar
1 3/4 t curry powder
Parmesan cheese (optional)

Directions:
Directions:
Saute' apples, onions and pepper in bacon drippings. (I use a dab of olive oil instead). Mix with all other ingredients except cheese in large casserole or roasting pan. Sprinkle top with cheese. Bake uncovered at 350 for 30 -45 minutes or until bubbly. Freezes well.

Crock Pot Version: Saute' apples, onion, and pepper with a dab of olive oil in crock pot on high. Once tender, add other ingredients and cook with lid venting until done (about six hours).
