1 large onion, diced
1 Tbsp oil
1 Tbsp garlic, minced
6 strips turkey bacon, diced
2 large russet potatoes, sliced 1/4"
6 cups water
6 Tbsp chicken broth
kale (chopped)

Directions:
Directions:
In a large soup pot, fry turkey bacon. Remove and set aside. In same pot, fry onion with oil and garlic. Add turkey bacon. Add potatoes. Stir until mixed. Add water and chicken broth. Simmer for 45 minutes or until potatoes are cooked. Serve hot. Add chopped kale to individual bowls. May add milk to individual bowls.
