1 # ground beef
1 med onion, chopped
1 can (16 oz) tomatoes
1 pkg taco seasoning mix
1 c uncooked rice (not instant)
1 c shredded cheddar cheese
2 c shredded lettuce
water

Directions:
Directions:
Brown beef with onion in 10" skillet, drain off fat. Drain & cut up tomatoes, reserving juice. Add water to juice to make 2 1/2 c liquid. Add tomatoes, liquid, taco seasoning & rice to beef in skillet, stir. Bring to a boil Reduce heat, cover & simmer until liquid is absorbed, about 25 min. Stir occassionally. Top with shredded lettuce & chese before serving.
