8 Eggs
1 c. Sugar
2 Tbsp. Water
1 tsp. Baking Powder
1 c. Flour
1 tsp. Vanilla

Directions:
Directions:
Separate the eggs. Beat the egg yolks, add sugar and beat until light colored. Add all other ingredients (except egg whites) mix well. Beat the egg whites in a bowl until stiff. Mix the two together with a spoon ( do not beat). Place in a greased wax paper lined jelly roll pan. Bake at 350 for 15 minutes. Sprinkle sugar or powdered sugar on a large towel, turn the jelly roll on to the towel. Remove from the pan and spread jelly on and roll up.

This was one of Auntie Vi's favorite things when she would come to North Dakota. I always had to make her some with apricot jelly.
