1 cup butter 1 cup sugar 4 eggs, separated 1/2 cup lemon juice 2 cups flour 2 tsp. baking powder 1 tsp. salt 2 tsp. lemon peel, grated
Cream butter and sugar, add beaten egg yolks; beat until light. Add lemon juice alternating with flour mixed with baking powder and salt. Mix thoroughly. Fold in stiffly beaten egg whites and lemon peel. Pour into muffin tins lined with paper cups. Bake at 375º for 20 minutes.
