Fresh fish (catfish, sunfish, walleye)
Potatoes
Vegetable Oil

Seasoning mix
1 c. flour
1/2 c. cornmeal
2 Tbsp. paprika
1 tsp. salt
2 tsp. onion powder
2 tsp. ground oregano
1/2 tsp. garlic powder
1/2 tsp. cayenne pepper

Directions:
Directions:
Thinly slice potatoes (peeled or not). Cut up fish into 2x2" pieces. Combine seasoning mix in large sealable plastic bag.

Add a handful of potatoes into seasoning, shake and cook in deep fryer. When browned, remove from grease and rest on paper towels. Then add a handful of fish into the seasoning and cook. Set up a dinner bar with salt and hot sauce.

Personal Notes:
This makes a great appetizer/meal. Set up chairs around the salt shakers and hot sauce so you can have hot fish and fries as soon as they're done. Best when served with a good dark beer.
