1 lb potatoes, peeled and sliced or diced
1 lb leeks, thinly sliced including the tender part of
the green (Or use yellow onions.)
2 quarts water
1 tbsp salt
4-6 tbsp whipping cream
2-3 tbsp minced parsley

Directions:
Directions:
Cut the root off the leeks and wash thoroughly to remove any grit. Cook potatoes and leeks in salted water until tender. Remove from heat and mash with a potato masher, fork, or immersion blender. Adjust seasoning. Just before serving, stir in the cream and parsley.
