13 lb. ripe tomatoes (about 40 medium)
2 celery ribs, coarsely chopped (optional)
3 medium onions, thinly sliced
1-2 hot banana(or other) peppers, coarsely chopped
1 green pepper, coarsely chopped
1 1/2c. chopped fresh parsley (optional)
1/2c. sugar
1-1 1/2 Tbsp. Worcestershire sauce
4-5 tsp. salt
1/4-1/2 tsp. hot pepper sauce
1/4 tsp. cayenne pepper
1/4 tsp. pepper

Quarter tomatoes; place in a 6-8 quart kettle or saucepan. Add the celery, onion, green pepper, hot banana pepper, and parsley. Simmer, uncovered, until vegetables are tender, about 45 minutes, stirring occasionally. Cool slightly; put through sieve or food mill. Return to kettle. Add remaining ingredients; mix well and return to a boil. Place in sterilized jars and process in hot water bath.
