1 16oz can of chickpeas or garbanzo beans (save liquid)
3 - 5 T lemon juice (depending on taste)
2 T olive oil
1 1/2 T tahini (sesame seed paste)
2 cloves garlic,crushed
1/4 c liquid from chickpeas
salt to taste

Directions:
Directions:
Drain chickpeas and set aside liquid from can. Combine remaining ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3 - 5 minutes on low until thoroughly mixed and smooth.
Serve with warm or toasted pita bread, or cover and refrigerate.

Just before serving, add fresh cucumber or tomato, or drained, chopped artichoke or pine nuts. Be creative. If you like it hot, add a sliced red chile or a dash of cayenne pepper. Will keep in fridge for up to 3 days or in the freezer for up to one month. Add a little olive oil if it appears to be dry.
